Ines Rosales tortas started being produced in 1910. Two secrets made them successful at first: high quality ingredients, including extra virgin Olive Oil, and a handmade process. You will notice that even today all the tortas have different shapes, this is because the handmade process is still applied presently. The excellent ingredients are also present.
