The owners of Mercado Central NYC, Zhana and Marco, had the unbelievable fortune to have lunch at the Michelin stared restaurant, Gueyumar, on the beach of Playa Vieja with Chef Abel in the kitchen (after spending the morning filming him grill then tin hake cheeks). It was the end of the most amazing 3 days they spent with Able and his partner and wife Louisa, and the pinnacle of their time together, which was nothing short of epic. One of the endless dishes Able served were these amazing sea cucumbers which he put into a hot skillet straight out of the tin along with the amazing EVOO he tins them in. They are super delicate, a soft, slightly spongy texture, and so special. It’s not an everyday tin, but a special occasion tin. Zhana goes overboard and makes thin spaghetti with sea urchin roe wiped into a bit of heavy cream then warms up the sea cucumbers, like Able showed them, and add those on top with a few scoops of black caviar. Ok, a little decadent, but sometimes a girl has to treat herself!!
