ESPINALER Small Clams in Brine

The Almejón (clam), also known as sea almond, is a very abundant mollusk on the Galician coast. It has a rather sweet flavor and is ideal for preparing stews and rice dishes.  We love using these clams in white pizzas with some high quality olive oil, parsley, lots of garlic, and a squeeze of lemon.
