Casa de Hualdo is producing the best Manchego Cheese out there. Their natural rind allows you to taste the fields and diet that their special Manchega sheep eat and that which gives their milk such a sweet, complex, and creamy flavor. All of their manchego is unlike any other you have ever had.
The color of the paste evolves from ivory to ochre tones as it matures, the holes are small and well distributed. The more lactic aromas give way to the aromas of ripe fruit.
It pairs perfectly with fig jam and Picual variety EVOO.
