These Ramon Peña Gold Label "Xoubas" (Galician for small sardines) come from the Galician estuaries. Ramon Peña makes an exquisite selection in port of the best pieces, as well as belonging to the “Gold Label” line of high quality. Once at the factory, sardines are cleaned by hand, rolled in flour, then fried in olive oil, and covered in the same sauce that goes into a classic Galician empanada sauce.
