In October occurs the first olive collection, early harvest, since the olive generates the oil molecules between July and December in most of the varieties then, there is a decrease in humidity in the fruit that effectively increases the yield on wet but not the amount of oil on dry matter. Therefore, we get quality, tradition and modernity that allows preserving the highest quality of this oil and the highest quality of olive juice.
Intense fruity oil, very balanced, with nuances of green herbaceous, connotations of apple and green almond . In addition, a large connotation of tomato and fresh fig tree, giving a sweet, soft and fluid sensation in the mouth, with very different sensory characteristics, since it is a superior olive oil collected at night and with an intense green. It is perfect for a culinary use that would serve as a dressing for flavors with a lot of aroma for its fruit and vegetable notes (green leaf, herb and tomato, “alloza”, touches of banana and almond).
It is a Picual with notes of Royal, which soften on the bitterness and itching, but it gives more intensity of sensations in the mouth.

An intense fruity aroma with green characteristics and the presence of aromas and nuances reminiscent of freshly cut green grass and tomato. In the mouth: very balanced and complex olive oil. It stands out for its aromatic intensity of fruit and vegetable notes (green leaf, grass and tomato, alloza, banana peel), where the most specific descriptors are herbaceous and green almond. In addition, it has a great connotation of green tomato and fresh artichoke, giving a sweet sensation in the mouth with a slightly bitter and fluid accent. The light spiciness and subtle astringency provide it with a sensational flavor.
