Also known as “foie del mar” monkfish liver is soft in texture and a delicate flavor considered a delicacy in countries from France to Japan. We use it as any other foie, quickly grilled with garlic and served along side a fillet of fish or pork or as a tapas on top of a slice of toast with a pickled onion.
