QUESO de Hualdo is producing the best Manchego Cheese out there. Their natural rids allows you to taste the fields and diet that their special Manchego sheep eat and that which gives their milks such a sweet, complex, and creamy flavor. All of their Manchego is unlike any other you have ever had.
The rind is natural and with grayish tones. The pasta has small and well distributed holes. Aromas of ripe fruit and dried fruits.
It pairs with assortment of cured meats, wholegrain bread with sweet tones and sprinkled with an intense fruity EVOO such as the Cornicabra variety.
Minimum ripening 10 months.
