Casa de Hualdo is producing the best Manchego Cheese out there. Their natural rids allows you to taste the fields and diet that their special Manchego sheep eat and that which gives their milks such a sweet, complex, and creamy flavor. All of their Manchego is unlike any other you have ever had.
The paste has an ivory tone in the younger cheeses, the holes are small and well distributed. The texture is firm and presents lactic aromas. Natural rind, with grayish tones.
This pairs perfectly with dates on branch, rye bread and abbey beers.
